Q: I see that lecithin is listed as one of the ingredients in the White Chocolate Wonderful and Dark Chocolate Dreams varieties. What is it and why do you use it?
A: Lecithin is a natural emulsifier, commonly used in the production of chocolate. We use it in our two chocolate varieties as it improves the flavor and texture of the cocoa butter in relation to the other ingredients in the peanut butter.
Q: What is the source of your lecithin?
A: Lecithin can be made from a number of different ingredients. The lecithin we use is 100% natural, certified kosher, and is vegetarian. It is derived from sunflower seeds. Previously, we had used lecithin derived from soy. Some consumers might still have jars of Peanut Butter & Co. brand peanut butter which lists lecithin from soy on the ingredient list.
Q: My jar of peanut butter says the lecithin was derived from soy and I am allergic to soy. Does that mean I can't eat your peanut butter?
A: Please consult your health care provider or allergy specialist. A 1998 study published in Clinical & Experimental Allergy showed that "the proteins in soy lecithin have little antigenicity in regard to soybean allergy." And according to Steve Taylor, PhD, Co-Director of the University of Nebraska's Food Allergy Research Resources Program, "avoidance is probably unnecessary for most soy-allergic individuals."
